Black Sapote Brownie

Did you know that nature provides a fruit that tastes like chocolate pudding?

I love this fruit in its natural state, but just recently I turned it into a brownie!

INGREDIENTS  

  • 1 cup of coconut oil

  • 1 cup of coconut sugar

  • 1 1/2 cup cocoa powder

  • 1 tsp salt

  • 1 tsp baking powder

  • 6 tablespoons of psyllium husk, soaked in 2 1/2 cups of water

  • 2 very ripe black Sapote fruit, discard skin and seeds

  • 2 tsp vanilla bean paste

  • 2 cup flour, I chose buckwheat flour

  • 1/2 cup chocolate chips, optional ( It taste perfect without the choc chips)

INSTRUCTIONS 

  • Preheat the oven to 180 degrees. Line an 8x8 pan with two sheets of parchment.

  • Melt the coconut oil and pour into the bowl.

  • Stir in the coconut sugar, cocoa powder, salt, and baking powder.

  • Add psyllium husk mixture, black sapote, and vanilla and beat well.

  • Stir in the flour, then gently fold in the chocolate chips.

  • Pour into the pan and smooth the top with a spatula. Bake about 45 minutes, or until cooked through.

  • Allow to cool and enjoy!
