High protein Banana Cake

This delicious banana cake is vegan and gluten free! Hemp seeds are jam packed full of protein so this is a great morning tea snack.

What you will need:

  • 4 Medium ripe bananas

  • 3/4 cup Coconut sugar

  • 3/4 cup Coconut oil

  • t tsp Vanilla bean paste

  • 1 3/4 cups Gluten free self raising flour

  • 1/4 cup Buckwheat flour

  • 1 tsp Ground cinnamon

  • 1/2 tsp Ground Nutmeg

  • 2 tsp baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon sea salt

  • 1/3 cup Hemp seeds

  • 1 or 2 Bananas extra

What next?

  1. Preheat oven to 180 degrees celsius, grease a baking dish approx 22cm round or 12cm x 22cm loaf pan; line base and sides with baking paper

  2. Mash banana, add sugar, mix until combined. Whisk in coconut oil and vanilla until well combined

  3. Sift flours, spices, baking powders and salt over the banana mixture. Gently fold dry ingredients into banana mixture, then stir in 1/4 cup of hemp seeds.

  4. Spoon mixture into pan, sprinkle with extra hemp seeds and place extra banana on top, sliced lengthways

  5. Bake for 45 mins or until skewer comes out clean, leave in pan for 5 mins before placing on cooking rack, serve once cooled.
